Beso Bisou , the new sister restaurant to La Bonne Vache , is coming to Georgetown this fall — and we couldn’t be more excited to continue doing what we love: making Georgetown a more delicious and happy place.

We are seeking an experienced, driven, and highly organized Executive Sous Chef to join our opening leadership team and help bring Beso Bisou to life.

Working closely with Chef Partner Robert Aikens , the Executive Sous Chef will play an integral role in executing the culinary vision for Beso Bisou and establishing the standards, systems, and culture of our kitchen from day one.

We’re looking for a hands-on leader who loves to cook, can execute recipes with precision and consistency, communicates exceptionally well, and understands that running a great kitchen means balancing great food, great people, and great business practices.

THE ROLE

The Executive Sous Chef will work directly with Chef Partner Robert Aikens to execute and maintain the restaurant’s culinary program while taking ownership of day-to-day BOH operations.

Responsibilities include:

• Execute Chef Aikens’ recipes, techniques, plating standards, and culinary vision with precision and consistency

• Maintain clear, open, and consistent communication with Chef Partner Robert Aikens

• Lead, train, develop, and motivate the BOH team

• Oversee daily kitchen operations, prep, production, service, and closing procedures

• Take ownership of all food purchasing and ordering

• Manage inventory, receiving, product rotation, storage, and waste

• Maintain food cost below 30%

• Manage scheduling and staffing to maintain labor cost below 30%

• Monitor portioning, yields, waste, purchasing, and vendor pricing to protect profitability without compromising quality

• Conduct regular inventory counts and maintain accurate cost controls

• Ensure recipes and preparation are executed consistently across every service

• Establish and maintain pars, prep lists, ordering systems, kitchen procedures, and operational standards

• Maintain exceptional standards for cleanliness, organization, food safety, and sanitation

• Work closely with FOH and restaurant leadership to create a seamless guest experience

• Lead by example and foster a kitchen culture centered around professionalism, accountability, communication, respect, and hospitality

WHO WE’RE LOOKING FOR

Our ideal candidate is a culinary leader who is equally comfortable on the line during a demanding service and managing the numbers behind a successful kitchen.

You should have:

• Previous Executive Sous Chef, Chef de Cuisine, or comparable senior kitchen leadership experience

• Strong culinary technique and the ability to execute established recipes accurately and consistently

• Experience opening a new restaurant is highly preferred

• Strong knowledge of purchasing, inventory management, food costing, and labor management

• Proven ability to manage food and labor costs while maintaining exceptional quality

• Excellent organizational and communication skills

• Strong leadership and team-development abilities

• The ability to receive direction, collaborate, and communicate openly with a Chef Partner

• A calm, solutions-oriented approach in a fast-paced kitchen environment

• High standards and exceptional attention to detail

• A genuine commitment to hospitality and creating memorable guest experiences
